Carillon Brewing Company serves history by the pint. Each pint of our house-made beer is made just as it would have been in the past. We start with historical recipes to create each historical drink. Then, historical varieties of malt and hops are used to make sure the recipes are authentic. Finally, historically designed equipment and methods are used as each step of the brewing process unfolds right before your eyes.
We encourage you to select a flight full of our beers to really take in beers from the past. Currently we are pouring: (shown left to right in the photo) Porter, Coriander Ale, Irish Red Ale, Spiced Dunkelweizen, Spruce Ale, and non-alcoholic Ginger Ale and Root beer. If you really want to experience beer just as early Daytonian’s did, ask for a Cask Ale–naturally carbonated and room temperature.
